New DAVOS restaurant at Fairfield by Marriott Cebu Mactan serves coastal Filipino flavors starting April 15


MANILA, Philippines (April 2026) — Travelers landing in Cebu can now enjoy coastal Filipino flavors just minutes from the airport.

DAVOS, the new all-day dining restaurant at Fairfield by Marriott Cebu Mactan, officially launches on April 15, 2026. Located only two to three minutes from Mactan-Cebu International Airport, it offers the perfect spot for a first taste of Cebu or a satisfying meal before departure.

The name DAVOS draws from the Cebuano word “dabos,” meaning abundance. The restaurant celebrates Cebu’s rich marine life through a “Coastal Filipino” concept that blends authentic local tastes with international favorites.

Executive Chef Marcel Ramos leads the kitchen with a philosophy centered on vibrant regional flavors. He draws inspiration from iconic Cebuano dishes like sinuglaw, using thoughtful techniques to balance savory, acidic, and umami notes.

Signature items include Shrimp Inasal, Beef and Mash, Crispy Pork Belly, Soy Glazed Grilled Chicken, and Ube Burnt Cheesecake. While many dishes look familiar, each one reimagines culinary heritage for modern palates.

DAVOS operates daily from 6 a.m. to 10 p.m. and welcomes both hotel guests and walk-ins. The space seats up to 87 people in a modern, warm ambiance with cool blues and earth tones that evoke the oceanside. It works especially well for groups thanks to its laid-back vibe.

Beer Hour and fun nights
Guests can enjoy Beer Hour with unlimited beer cocktails (Summer Beer, Beer Mosa, or Shandy Beer) paired with one savory pica pica like Spiced Chicken Croquette, Tokwa’t Baboy, Squid Crackers, or French Fries.

  • Beer Hour Extension Trivia and Game Nights (7 p.m. to 10 p.m.): May 15, June 12, July 17, 2026

Breakfast buffet runs from 6 a.m. to 10 a.m. with Filipino and Asian dishes, fresh pastries, fruits, and beverages. Lunch and dinner are served à la carte, featuring Continental and Mediterranean options with high-quality ingredients.

For quick bites anytime, The Market stays open 24/7 with sandwiches, salads, pastries, beverages, fresh fruit cups, fudgy revel bars, and classic chocolate chip cookies.
